SUNDAY 17 OCTOBER 2010: 10 Vege Spaghetti Bolognese. I’m continuing to work towards the ‘Weigh it Up‘ principle of eating 15 different fruit, vegetables, nuts, grains and seeds. A breakfast buffet, that we have been treated to at the Hyatt over the last few days, has made it very easy to consume at least eight or ten different fruits, nuts and seeds. For dinner tonight I added carrot, leek, garlic, pumpkin, celery, purple basil, chives, parsley, rosemary, and oregano to my other bolognese ingredients. I’m not sure if ‘Weigh it Up’ count herbs in the Rule 15 but I hope so!

MONDAY 27 SEPTEMBER 2010: Mini meatloaf, mashed potato and peas. Junior Masterchef inspired my boys to get cooking, and it was quite delicious.
SUNDAY 26 SEPTEMBER 2010: Stir-fried Mexican Beef with mexican beans and cheese in mini mountain bread cups. The mini mountain bread cups were so simple to make. Simply quarter a piece of mountain bread and press it in to a mini muffin pan. Bake for 3 minutes in a preheated oven. Spoon beef, beans and cheese into the cup. Top with guacamole, if you have any! Pick up and eat.

. We had some delicious Lamb & Feta sausages but the meal ended up being fine but nothing special - but the River Fire fireworks were spectacular.
FRIDAY 3 SEPTEMBER 2010: Curry night! Figueredo’s Beef Madras. You have to try these curry powders and the recipe on the packet. They are divine. But if you can’t be bothered cooking and you’re in Brisbane try the restaurant.
THURSDAY 2 SEPTEMBER 2010: Dinner with the girls at Alegria, Park Road, Brisbane. The paella was sensational. Those left at home had cheese omelette and left over minestrone!

THURSDAY 19 AUGUST 2010: Homemade Pizza
You have to try this: 200g natural yoghurt mixed with a cup of s-r flour. Cook for 10 minutes at 180 C, then add pizza toppings and cook for another 15 minutes. So simple.
WEDNESDAY 18 AUGUST 2010: Jill Dupleix’s Baked Spaghetti. Looks pretty average here but it tastes spectacular. Think of a fantastic spag bolg x 10! Yum.
TUESDAY 17 AUGUST 2010: Vegetable Curry with Yoghurt. A healthy choice!
MONDAY, 16 AUGUST 2010: Maple baked chicken with sweet potato. A simple meal that’s a real treat. Be sure to cook the veges for 20-30 minutes longer than recommended in the recipe.

Call me crazy but I think I might try the maple baked chicken on the girls…….what’s not to love about it?….but that said I won’t get my hopes up to high.
It was delicious. The chicken was so tender. But – be warned – the veges definitely need to cook for longer than the time on the recipe. I think they need at least an extra 20 minutes. I used mixed Chicken pieces but I think it would be delicious with thighs, especially if you can get them with the skin on.
