Have you missed me? Things are a little hectic. Work is insane…my husband is stuck in Chile…and I think I might be getting a cold.
Time for some pumpkin soup…quick and easy.
STEP 1: microwave or steam one whole carrot, sliced and about twice as much pumpkin.
STEP 2: Place cooked carrot, pumpkin, a little of the water it was cooked in and a little stock concentrate into a blender. Wizz until smooth.
STEP 3: Pour into a bowl and add a little freshly ground pepper. Serve with your favourite bread.
What a fantastic, delicious, hit of goodness. I’m so pleased it’s soup season.
